Chicken Parmesan


This week I decided to try making chicken parmesan for supper. I did my usual, and went and looked through Pinterest to see what the different recipes said to do and then picked one to try. The recipe I looked at to reference is pretty basic and there are 2 other recipes I saved to my Pinterest board as well.

I had chicken breasts in the freezer and though this would be a perfect recipe to try. I ended up using shake and bake to bread the chicken since I didn't have panko crumbs but bread crumbs or crackers would have worked too if you didn't have either of them. I spiced up the chicken and let it sit for a few hours before breading and cooking them, just to give them some more flavor. I cooked the chicken for about 30 minutes at 400 degrees and then added the pasta sauce and cheese and put it back in the oven for a few more minutes so the cheese could melt. Now that I know I can use shake and bake and how long to cook it for, this will be a quick and easy meal that I will continue to make.


While the chicken was cooking I boiled water and started to cook the pasta. Once the pasta was cooked I added in some cheese and pasta sauce to make a creamy sauce. I used fettucine pasta but any pasta would be good with it! I also decided I wanted to make a greek salad to go with it. I cut up and washed the lettuce and vegetables and then tossed them into a bowl. I then added some feta cheese and croutons and then added the greek dressing.


The chicken was a hit! My sister was a little skeptical when I was putting the pasta sauce and cheese on it instead of just leaving it as "normal" chicken, according to her. This is defiantly a meal that I will continue to make, since it is so easy and fairly quick if your chicken is already defrosted.

Overall rate from everyone is an 8.5/10, pretty much restaurant quality I would say!
